Lentil salad

A very fresh tasting salad, perfect for a summer evening.

The Dressing

  1. Chop the spring onion, garlic and if you use chili instead of mustard the chili, and fry it all together for a few minutes in the oil.

  2. With the oil cooled down some, add the mayonnaise, yogurt, lime/lemon juice, mint and mustard to the oil, mix well and keep in the fridge

The Salad

  1. Boil the lentils in plenty of water for 20 minutes (or until soft)

  2. Drain the excess water from the lentils and set them aside to cool down.

  3. Dice the carrot and cucumber, and mix it with the cooled down lentils

  4. Chop the cilantro and mix this in as well

  5. Add anything else, such as cherry tomatoes or feta and olives and add the dressing just before serving
