  1. Prepare eggs in medium pan, mix eggs and egg yolks together.
  2. In the small pan, add lemon juice, butter, sugar and lemon zest in the pan, put it on medium heat, stir it until butter is melted, and the mixed is bubbling, then turn off the heat.
  3. Now you have to whisk the eggs in the medium pan vigorously non-stop, when slowly add hot lemon juice to the eggs pan. (Be careful, do not add hot lemon juice to fast, the egg will be cooked! Remember, whisk it vigorously non-stop, or else the egg will be scramble!)
  4. After add all hot lemon juice to the egg pan, put it back on the stove, keep stirring it on low heat until the mixture is thicken and start to bubble.
  5. To check if the curd is ready, dip the spoon in the mixture, if it's coat the spoon, then it's ready. (80 degree Celsius)
