Add all ingredients to the pan and mix them well over low heat.

Stir constantly over low heat. You will see the butter melt and the mixture become well-combined and watery, but after a short period of time, the magic happens: the curd thickens and starts to bubble (about 15-17 mins).

To check if the lemon curd is ready, dip a spoon into the mixture; if it coats the spoon, then it is ready (about 80°C).
