My moms tiramisu recipe. Easy to make and always delicious.

  1. Whip the while eggs to a foamy consistency

    Either do this "au bain-marie" making sure the eggs don't cook, or if you have an sous-vide or instapot first sterilize the eggs at exactly 57c for 75 minutes

  1. Whip the whipping cream with the sugar

Stir the mascarpone to a mooth consistency and then mix that into the whipping cream

Fold the eggs into the mascarpone and whipping cream mix

Add the almond liqueur and the to the strong coffee / espresso

  1. Put one layer of laydifingers in your lasagna or cake-form, sugar side down, and sprinkle the coffee almond liqeur mixture over it

    You want to cover the whole cookie, but not drench it, the cookie should still be a little crispy. 

  1. Spread a layer of mascarpone mixture over the cookies

Repeat the last two steps to make another layer

Finally use a sieve to spread the cacao on top

Rest in the fridge for minimum of 3 hours
