This recipe uses the chocolate chip cookies as a base, but instead of chocolate we add apple chunks, and to finish it off we roll the dough balls in a ix of cinnamon and sugar.

Apple cinnamon cookies

Ingredients
Cookie dough
Cinamon Sugar dip
Instructions
Make the dough

Mix flour, baking powder and corn starch together

In a separate bowl mix the butter, egg, sugar and vanilla

Add the two boals together and rest in the fridge for 2 hours
Make the cookies

Mix the sugar and cinnamon together in a bowl

Take the dough from the fridge and mix in the chunks of apple

Scoop balls of the dough into the cinnamon sugar bowl and make sure they are fully covered, then transfer to a baking sheet
Leave enough room around each dough ball as it will sag and spread -
Bake at 165c for 10 to 15 minutes depending on the size of the ball
The cookies are still very soft when finished baking, but they will continue to bake while cooling down on a rack for another 15 minutes.
