Preheat the oven to 150°C.

Line the cake mold with parchment paper.

Separate the egg whites from the yolks. Put the egg whites in a mixing bowl and refrigerate them.

Heat the butter and milk until the butter has melted.

Mix the melted butter, milk, and flour together, then add the egg yolks.

Add the sugar to the chilled egg whites and whip until a silky-smooth meringue with soft peaks forms (about 6 minutes). Start at medium speed, level 4.

Fold the meringue into the egg yolk mixture and mix until just combined.

Boil some water for the water bath.

Pour the batter into the cake mold and gently drop the mold onto the counter a few times to release any trapped air bubbles.

Bake in a water bath at 150°C for 50 minutes on the lower rack (Level 4). Do not place the cake too close to the upper heating element.
